Do I need to be VAT registered to invoice?

No. Self employed people below the registration threshold invoice without VAT and simply show the total amount due.

Do I have to show my UTR on invoices?

It is not required, though CIS subcontractors in construction are usually asked for it by the contractor.

How long should I keep invoices?

At least five years after the 31 January submission deadline of the relevant tax year.

Can I charge interest on late payments?

Yes. Under the Late Payment of Commercial Debts Act you can charge statutory interest plus a fixed compensation amount once payment is overdue.

What payment terms should I use?

Net 14 or net 30 are common. State the due date clearly on the invoice so the terms are enforceable.
